Hidden away in Gran Turismo 2 are three unused reverse versions of various tracks in the game.

The real track itself was not designed to be driven on backwards, so this is likely the reason this variant was not used. Two further tracks named l_20 and dart_test2 weren't removed from the game yet aren't accessible to drive on without a cheat device.

The twisty track actually forms a complete lap though any AI cars present cannot navigate around it. The track uses the evening skybox from Red Rock Valley Speedway. Early graphics for the Communication/Data Transfer menu options can be found in the final version of the game. The used version features different art and is smaller in height.

Indi Leftover
Indi, a track shaped after Indianapolis Motor Speedway, can be accessed through hacking in demo builds of the game. The track was mostly deleted in the final game, with its only surviving asset being this background sprite.
License Test Minimaps
Minimap files for the various license test tracks exist, but go unseen as the map isn't displayed during tests earlier than the Super License (which only uses regular courses). Many of them are crudely drawn so they form a complete loop, even though they're simply "track sections" in reality.

A text string present in gt2.vol shows that it was possible to earn a fourth prize in the license tests. It is even translated to other languages.

Another text string inside the game also shows that a feature to check the starting line-up in the post-race menu, much like the original Gran Turismo, was meant to be included.

Texture Tags
A few car textures are inscribed with the word 'polys' in out of the way or unused portions of the image. This refers to Polys Entertainment, the original name of developers Polyphony Digital. It should be noted that these texture tags appear too in the previous game, since these cars originate from there with no significant changes to GT2 except for updated rims.
Most non-racing NSX's both Acura and Honda use copies of this sheet, and the writing is on them all
Mitsubishi FTO variations have a smaller rendition above the mirror on the side-on portion
Similar to the FTO's, the Mitsubishi Cyborg R also shares the honour of being tagged
The Nissan Sileighty finds the text next to the rear wheelarch, again on the side-on portion
Not to be outdone, the Nissan Skyline GTS25t Type M/280 Type MR, both racing and not, bring a strangely tall S to the party
Having the last laugh however are the Nissan Silvia K's/Q's 2000cc who give over a truncated license plate style panel to the Polys branding
The Nissan 240SX Type S finds its tag underneath the wheel in the top left corner. The Type X variation also has the tag, though next to the wheelarch like the Sileighty above
Most Toyota Supras use a copy of this texture, each sports the now familiar text alongside a longer, reversed 'Polys entertainment'
Last but not least, the TVR Griffith 500 and the Blackpool B340 sport their text within the space where the headlight goes
Mitsubishi Lancer Evolutions are singled out for special treatment. Possibly owing to the fact that the various models differ only slightly, most of their textures forwent the Polys writing in favour of identification text. Excepted were the Evo II, III and IV, whose textures are devoid of any text whatsoever (note the Lancer Evolutions that had those identification text are new to GT2, except for II since the texture sheet were based on the Evo III):
The GSR version of the Evo V sports '5N' text, presumably for 5 Normal
The unused Evo V Rally car variation has a smaller '5N' a quarter of the way down the right side
Evo V RS racing changes things up with a '5rs' label. It's also present on the non-racing version texture
The Mine's Evo V keeps it in the family with a '5rs' all of its own
Bucking the trend, the used Evo V Rally Car hides a '5Ar' to the left of the Ralliart logo
The Evo VI GSR doesn't have the 'N' of its Evo V counterpart, instead showing 'gs' alongside the 6
The racing version of the Evo VI GSR changes the designation again, from '6gs' to '6gr'
Likewise and like its Evo V counterpart, the RS version has the 'rs' text
Finally, the Evo VI RS racing and the Evo VI Rally car have '6rr'
